  • 1 pound cooked chicken, shredded
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 packet enchilada seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1/2 cup chopped cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add shredded chicken, corn, black beans, diced tomatoes, and enchilada seasoning. Stir well.
  3. Pour in chicken broth and bring to a simmer.
  4. Once simmering, stir in heavy cream and cook for an additional 5 minutes.
  5. Remove from heat and stir in shredded cheese and chopped cilantro before serving.
