  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) enchilada sauce
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until soft.
  2. Stir in shredded chicken, black beans, corn, and enchilada sauce. Cook for a few minutes.
  3. Add chicken broth, cumin, and chili powder. Bring to a boil, then reduce heat and let simmer for 15 minutes.
  4. Stir in heavy cream and simmer for an additional 5 minutes. Adjust seasoning as needed.
  5. Serve hot, garnished with your choice of toppings.
