Creamy Cajun Chicken Pasta

  • 2 chicken breasts
  • 8 ounces fettuccine pasta
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Chives for garnish

Instructions

  1. Cook fettuccine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and Cajun seasoning, cooking until chicken is no longer pink.
  3. Add minced garlic and cook for 1 minute.
  4. Stir in heavy cream and diced tomatoes, letting it simmer for 5 minutes.
  5. Add the cooked fettuccine and Parmesan cheese, mixing until creamy.
  6. Season with salt and pepper to taste, and garnish with chives before serving.

Notes

  • For extra spice, add more Cajun seasoning.
  • Can substitute chicken with shrimp for a different protein option.
