Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn, fresh or frozen
  • 1/2 cup feta cheese, crumbled
  • 1 bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 limes, juiced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook couscous according to package instructions and set aside to cool.
  2. In a large bowl, combine black beans, corn, bell pepper, and cilantro.
  3. Add the cooled couscous to the vegetable mixture.
  4. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
  5. Pour the dressing over the couscous mixture and toss to combine.
  6. Gently fold in the feta cheese.
  7. Serve immediately or refrigerate for up to an hour before serving.

Notes

  • This dish can be served warm or cold.
  • Add more vegetables like cherry tomatoes or avocado for extra flavor.
