Coffee and Walnut Blondies

Ingredients

  • 200 g unsalted butter
  • 250 g brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 250 g all-purpose flour
  • 1 tsp baking powder
  • 50 g walnuts, chopped
  • 100 ml brewed coffee

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a saucepan, melt the butter and brown sugar together, stirring until smooth.
  3. Remove from heat, let cool slightly, then whisk in eggs and vanilla.
  4. In a bowl, mix together flour and baking powder, then combine with the butter mixture.
  5. Fold in the chopped walnuts and brewed coffee until well mixed.
  6. Pour the batter into the prepared dish and bake for 25-30 minutes.
  7. Cool completely before cutting into squares.

Notes

  • For an extra coffee kick, add more brewed coffee to the mixture.
  • These blondies can be served warm with a scoop of ice cream.
