  • 2 large eggs

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the bananas and mix in the crushed pineapple, shredded coconut, sugar, melted butter, eggs, and vanilla extract.
  3. In another bowl, combine baking soda, salt, and flour.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
