Coconut Pineapple Banana Bread – A Taste of Hawaii

  • 2 ripe bananas
  • 1 cup crushed pineapple
  • 1/2 cup shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Add crushed pineapple, shredded coconut, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract to the bowl. Mix well.
  4. In another bowl, combine the baking soda, salt, and flour. Gradually add this mixture to the banana mixture.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For an extra tropical flavor, consider adding macadamia nuts.
  • Make sure the bananas are very ripe for the best flavor.
