  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1/4 cup toasted coconut for topping

Instructions

  1. In a saucepan, combine the heavy cream, coconut milk, sugar, cornstarch, and salt. Whisk until smooth.
  2. Heat the mixture over medium heat, stirring continuously until it thickens.
  3. In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot mixture to the eggs, then return it all to the saucepan.
  4. Bring the mixture to a gentle simmer while continuing to stir.
  5. Remove from heat, then stir in the vanilla extract and shredded coconut.
  6. Pour the filling into the pre-baked pie crust. Chill in the refrigerator for at least 4 hours.
  7. Before serving, top with whipped cream and toasted coconut.

Notes

  • For a more intense coconut flavor, use coconut extract in addition to vanilla.
