  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups vegetable broth
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 cup green beans, cut into pieces
  • 1 cup pasta (like ditalini)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups spinach, roughly chopped

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Add olive oil, onion, carrots, and celery to the pot; sauté until softened.
  3. Add garlic and cook for an additional minute.
  4. Stir in diced tomatoes and vegetable broth; bring to a boil.
  5. Add cannellini beans, green beans, and pasta; cook until pasta is tender.
  6. Season with Italian seasoning, salt, and pepper; stir in spinach just before serving.
  7. Garnish with crumbled turkey bacon.
