  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in the baking soda and salt.
  5. Add the sugar, egg, and vanilla extract, and mix well.
  6. Stir in the flour until just incorporated.
  7. In a small bowl, combine the cinnamon and brown sugar.
  8. Pour half of the batter into a greased loaf pan, sprinkle half of the cinnamon-sugar mixture, then add the remaining batter and top with the rest of the mixture.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Let it cool before slicing.

Notes

  • For a nutty flavor, add chopped walnuts or pecans to the batter.
  • Make sure the bananas are very ripe for sweetness.
