Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes with green chilies
  • 1 cup cheddar cheese, shredded

Instructions

  1. In a large pot, sauté onion, bell pepper, and garlic until soft.
  2. Add chicken, black beans, corn, taco seasoning, and chicken broth.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove chicken, shred it, and return to the pot.
