  • 4 cups chicken broth
  • 1 cup frozen peas
  • 2 tablespoons cornstarch
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onions, carrots, and celery, cooking until soft.
  3. Stir in the minced garlic and cook for 1 minute.
  4. Add the chicken breasts and cook until no longer pink.
  5. Pour in the chicken broth and bring to a simmer.
  6. In a small bowl, mix cornstarch with a bit of water to create a slurry.
