  • 1 cup diced onion
  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 2 tablespoons cornstarch (optional for thickening)
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and potatoes. Cook until vegetables are softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken, peas, thyme, garlic powder, salt, and pepper.
  5. Simmer for 15-20 minutes.
  6. If thickening, mix cornstarch with a bit of water and stir into the soup.
  7. Remove from heat and stir in heavy cream before serving.
