  • 1 pound chicken breast, diced
  • 4 slices turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, cubed
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons thyme
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove from pot and set aside.
  2. Add the chicken breast to the pot and cook until no longer pink.
  3. Stir in the carrots, celery, and potatoes. Cook for about 5 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the frozen peas, thyme, garlic powder, salt, and pepper. Simmer for about 15 minutes.
  6. Stir in the heavy cream and bacon. Cook for another 5 minutes.
  7. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a thicker soup, you can add a cornstarch slurry.
  • Feel free to use leftover rotisserie chicken for convenience.
