Chicken Gnocchi Soup

A warm and hearty chicken gnocchi soup recipe perfect for any occasion.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 4 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 16 ounces gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add onions, garlic, carrots, and celery. Sauté until soft.
  3. Stir in thyme and oregano, cooking for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the shredded chicken and gnocchi. Cook until gnocchi are floating.
  6. Mix in spinach and heavy cream. Season with salt and pepper.
  7. Simmer for an additional 5 minutes before serving.

Notes

  • This soup freezes well, just omit the cream and add it when reheating.
  • Feel free to add other vegetables for extra nutrients.
