Chicken Enchilada Soup

  • 2 cups cooked shredded chicken
  • 1 can enchilada sauce
  • 1 can black beans, rinsed
  • 1 can corn
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 avocado, diced

Instructions

  1. In a large pot, heat some oil over medium heat and sauté the onion and garlic until fragrant.
  2. Add in the cooked chicken, enchilada sauce, black beans, corn, chicken broth, tomatoes, and spices. Stir well.
  3. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Add shredded cheese and sour cream, stirring until melted and mixed.
  5. Remove from heat and top with diced avocado before serving.
