  • 4 cups chicken broth
  • 2 cups enchilada sauce
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 bell pepper, chopped
  • 1 jalapeño, chopped (optional)
  • 1 cup shredded cheese (for topping)

Instructions

  1. In a large pot, sauté onions and garlic over medium heat until softened.
  2. Add chicken, black beans, corn, tomatoes, chicken broth, and enchilada sauce.
  3. Stir in chili powder, cumin, bell pepper, and jalapeño (if using).
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
