Chicken Enchilada Crock Pot Meal

A delicious and easy Chicken Enchilada recipe made in the crock pot, perfect for busy weeknights.

Ingredients

  • 1 pound boneless chicken breasts
  • 1 can red enchilada sauce
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 8 tortillas

Instructions

  1. Place the chicken breasts in the bottom of the crock pot.
  2. Pour the enchilada sauce over the chicken.
  3. Add the taco seasoning, black beans, and corn.
  4. Cook on low for 6-7 hours or high for 3-4 hours.
  5. Shred the chicken before serving and stir in shredded cheese.
  6. Serve in tortillas.

  • Serve with avocado and sour cream for extra flavor.
  • Can be made ahead and stored in the refrigerator.
