  • 1 pound boneless, skinless chicken thighs
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup cooked rice
  • 1 cup shredded cheese
  • avocado for serving

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Add black beans, corn, salsa, cumin, and chili powder.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken with two forks.
  5. Stir in cooked rice and top with shredded cheese.
