CHICKEN AND CORN CHOWDER

This creamy Chicken and Corn Chowder with turkey bacon is the ultimate comfort food, perfect for chilly evenings.

Ingredients

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cups diced potatoes
  • 2 cups corn kernels
  • 4 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped parsley

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Add olive oil and diced onions to the pot. Sauté until onions are translucent.
  3. Add diced potatoes and corn, stirring for another 3 minutes.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
  5. Stir in milk, salt, and peppers, cooking until heated through.
  6. Serve topped with crumbled bacon and chopped parsley.

Notes

  • For a thicker chowder, blend a portion of the soup and stir it back in.
  • This chowder can be made ahead of time and tastes better the next day.
