Chicken Alfredo with Spinach and Sun-Dried Tomatoes

Ingredients

  • 2 cups cooked fettuccine
  • 1 pound chicken breast, diced
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Stir in the diced chicken and cook until no longer pink.
  4. Add the sun-dried tomatoes and spinach, and cook until the spinach wilts.
  5. Pour in the heavy cream and bring to a simmer.
  6. Stir in the Parmesan cheese until melted.
  7. Combine with cooked fettuccine, and mix well.
  8. Season with salt and pepper to taste.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Add more veggies like bell peppers for extra flavor.
