Cheesy Potato Soup

Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat and add the chopped onion. Sauté until soft.
  2. Add the diced potatoes and chicken broth. Bring to a boil and then reduce heat to simmer until potatoes are tender.
  3. Mash some of the potatoes for a thicker texture, if desired.
  4. Stir in the heavy cream, cheese, turkey bacon, garlic powder, salt, and pepper. Cook until the cheese is melted and the soup is heated through.
