  • 1 cup finely grated carrots

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a small cake pan by greasing it.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Add the oil and egg to the dry ingredients, and mix well.
  4. Fold in the grated carrots, crushed pineapple, and walnuts if using.
