Carrot Cake Cookies

Delightful treats combining the flavors of carrot cake into a delicious cookie format.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup walnuts, chopped (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  4. Beat in the egg and vanilla extract, then mix in the grated carrots.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. If desired, fold in walnuts and raisins.
  7. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • For extra flavor, add a pinch of ginger to the dough.
  • Try adding crushed pineapple for a tropical twist!
