  • 1 teaspoon baking powder

  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 16 ounces cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Add oil and eggs; beat until smooth. Stir in grated carrots.
  4. Pour batter into a greased cake pan.
  5. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  6. Spread cream cheese mixture over the carrot cake batter.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
