  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 slices turkey bacon, cooked and crumbled
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp nutmeg

Instructions

  1. In a large pot, cook the turkey bacon until crisp, then remove and set aside.
  2. Add onions and garlic to the pot and sauté until softened.
  3. Add butternut squash and vegetable broth, bringing to a boil.
  4. Reduce heat and simmer until squash is tender, about 20 minutes.
