  • 1/2 cup grated Parmesan cheese
  • 1 tsp nutmeg
  • 1 tsp salt
  • 1 package wonton wrappers
  • 1/4 cup melted butter
  • 1/4 cup fresh sage leaves

Instructions

  1. In a mixing bowl, combine the roasted butternut squash, ricotta cheese, Parmesan cheese, nutmeg, and salt.
  2. Lay out a wonton wrapper and place a small spoonful of the filling in the center.
  3. Moisten the edges with water, fold, and press to seal.
  4. Bring a large pot of salted water to a boil and gently drop in the ravioli.
  5. Cook for 2-3 minutes or until they float to the surface.
  6. In a skillet, melt butter and add sage leaves over medium heat until the butter browns slightly.
  7. Toss the cooked ravioli in the sage butter and serve immediately.
