Butternut Squash Mac & Cheese

A delicious twist on traditional mac and cheese using creamy butternut squash.

Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 8 ounces elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the macaroni according to package instructions until al dente.
  3. In a separate pot, cook the butternut squash in boiling water until tender, then drain.
  4. Mash the butternut squash, then stir in milk, garlic powder, onion powder, paprika, salt, and pepper.
  5. Combine the butternut squash mixture with the drained macaroni and half of the cheddar cheese.
  6. Transfer the mixture to a baking dish, top with the remaining cheese, and bake for 20-25 minutes.

Notes

  • For a creamy texture, blend the butternut squash with the milk instead of mashing.
  • Add breadcrumbs on top for extra crunch.
