Brown Butter Sage Butternut Squash Pasta

A delicious and indulgent pasta dish featuring brown butter, sage, and roasted butternut squash, perfect for fall.

  • 1 pound butternut squash, peeled and diced
  • 8 ounces pasta of your choice
  • 1/2 cup unsalted butter
  • 1/4 cup fresh sage leaves
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roast the butternut squash on a baking sheet until tender, about 25 minutes.
  3. In a large pot, boil salted water and cook the pasta until al dente.
  4. In a saucepan, melt the butter over medium heat, then add the sage leaves and cook until the butter is browned.
  5. Combine the pasta and roasted squash in the pot, then pour the brown butter and sage over it, mixing well.
  6. Serve with grated Parmesan cheese and season with salt and pepper.
