  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot until crispy. Remove and chop into pieces.
  2. Sauté the onions and garlic in the bacon drippings until softened.
  3. Add the diced potatoes and vegetable broth. Bring to a boil, then simmer until potatoes are tender.
  4. Stir in the broccoli and cook until tender.
  5. Blend the mixture until smooth, then return to the pot.
  6. Add heavy cream and cheddar cheese, stirring until melted and combined.
  7. Season with salt and pepper, then serve topped with turkey bacon.
