Blueberry Cheesecake Muffins

  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup blueberries, fresh or frozen
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the melted butter, eggs, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the blueberries.
  5. In a small bowl, beat the cream cheese with powdered sugar until smooth.
  6. Fill each muffin cup halfway with muffin batter. Add a teaspoon of cream cheese mixture, then top with more muffin batter to fill the cups.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • For an extra flavor boost, add lemon zest to the batter.
  • Try using different berries if desired.
