Baked Pumpkin Oatmeal

A delicious and healthy start to your day with baked pumpkin oatmeal.

Ingredients

  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • 1 cup milk (or dairy-free alternative)
  • 1/2 cup maple syrup
  • 2 eggs
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the rolled oats, pumpkin puree, milk, maple syrup, eggs, baking powder, cinnamon, nutmeg, and salt until well combined.
  3. If using, fold in the chopped walnuts.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30-35 minutes, or until the top is golden and a toothpick inserted comes out clean.
  6. Allow to cool slightly before serving.
