Baja Shrimp Tacos

  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • 8 corn tortillas
  • 1 cup cabbage, shredded
  • 1/2 cup pico de gallo
  • 1/4 cup cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a bowl, combine shrimp, chili powder, cumin, and olive oil. Toss to coat.
  2. Heat a skillet over medium heat and add the shrimp mixture.
  3. Cook for about 3-4 minutes until shrimp are pink and opaque.
  4. Warm the corn tortillas in a separate skillet.
  5. Assemble tacos by placing shrimp on tortillas and topping with cabbage, pico de gallo, and cilantro.
  6. Squeeze lime juice over tacos before serving.
