Award Winning White Chicken Chili

Award winning white chicken chili is a comforting dish that’s full of flavor and guilt-free!

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can diced green chilies
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and cook until translucent.
  3. Stir in the garlic and cook for another minute.
  4. Add the chicken breasts and cook until browned on both sides.
  5. Add the white beans, diced green chilies, chicken broth, cumin, chili powder, oregano, salt, and black pepper. Bring to a boil.
  6. Reduce heat and simmer for 20-25 minutes or until chicken is cooked through.
  7. Remove the chicken and shred it, then return to the pot.
  8. Stir in the corn, sour cream, and cheese. Cook for an additional 5 minutes until heated through.

Notes

  • For a spicier chili, add jalapeños or increase the chili powder.
  • Serve with tortilla chips or cornbread for a complete meal.
