- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can diced green chilies
- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup corn
- 1/2 cup sour cream
- 1/2 cup shredded cheese
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and cook until translucent.
- Stir in the garlic and cook for another minute.
- Add the chicken breasts and cook until browned on both sides.
- Add the white beans, diced green chilies, chicken broth, cumin, chili powder, oregano, salt, and black pepper. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes or until chicken is cooked through.
- Remove the chicken and shred it, then return to the pot.
- Stir in the corn, sour cream, and cheese. Cook for an additional 5 minutes until heated through.
Notes
- For a spicier chili, add jalapeños or increase the chili powder.
- Serve with tortilla chips or cornbread for a complete meal.
