20-Minute Instant Pot Healthy Chicken Recipes for Busy Nights

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Season the chicken with garlic powder, onion powder, paprika, salt, and pepper.
  2. Set the Instant Pot to ‘Sauté’ and add olive oil.
  3. Brown the chicken for about 3-4 minutes on each side.
  4. Add chicken broth and lemon juice to the pot.
  5. Close the lid and set it to ‘Manual’ for 10 minutes.
  6. Once done, allow for natural release for 5 minutes, then quick release remaining pressure.
  7. Remove the chicken and shred it with two forks.
  8. Serve immediately or use in recipes.
